Bread ‘n’ Tomatoes

Today my Mom and I spent two and a half hours working for one of our close friends on the Island. It just so happens that he has a giant greenhouse where most of our veggies come from. We were pruning tomato plants. It was really cool, don’t get me wrong, it wasn’t easy but it was cool. We left the hours at about 12:30 and started work at 1. We were on our knees in the intense heat of the greenhouse until 3:30 working on row upon row of young tomato plants. It was an awesome experience; I really enjoyed helping out a friend and learning about gardening. By the end of it our hands were stained black from all the tomatoes and dirt. The only thing I regret was putting on a clean pair of jeans this morning because like my hands they were also black, oh well. Once all the tomatoes were done we went up to his house for tea and toast that was served with a fantastic apple cardamom jelly. I got supper lucky and got to take home a jar of the jelly, a Chimayo Pepper plant and the recipe for the bread that we ate for toast. So all in all, I’d say I had a pretty awesome friday.

Bread recipe:

  • 3 cups white flower
  • 2 cups rolled oats
  • 2 tbsp instant yeast
  • 1 tbsp sugar
  • 1 tsp salt

Mix all the dry ingredients add 2-1/4 cups of warm water stir in well let sit in a warm container at room temperature for 8-18 hours.

Pour into an oiled bread pan and put the pan in a dutch oven with lid, bake for one hour in an oven that has been preheated to 375°F – 400°F.
